I never seem to pick the right wine.

I have seen people use a white like Gewürztraminer with traditional turkey and all the trimmings, and I have seen them use a nice Merlot to do the same. I would say the heavier the sauce/gravy, the more appropriate the reds would be. I remember my parents using champagne at Thanksgiving one year and it worked!
